Nothing says cold weather like a good, hearty crockpot meal! This recipe is delish and it freezes really well too. I usually double this recipe and freeze half of it. It's adapted from a recipe in Simple 1-2-3 Slow Cooker Recipes by Rival.
Here's what you will need:
1 pound lean ground beef
1 can (14 ounces) beef broth
1 small green bell pepper (diced)
1 jar (mine comes in 5.75 ounces) pimento-stuffed green olives (diced) with juice
1/2 medium onion (diced)
2 cloves garlic (minced)
1 Teaspoon ground cumin
1/2 Teaspoon dried thyme
1) Brown beef in skillet and drain.
2) While beef is browning, I put all of my veggies in a food processor and dice them up.
3) Place everything in the Crockpot, cover and cook on low for 4 hours.
And here's how it looked after cooking for about 4 hours.
We serve ours over rice (because we eat rice with everything!) but the original recipe serves it over couscous. You definitely need something to absorb the liquid so I think either choice is a good one.

ReplyDeleteI love just about anything cooked in the crock pot. I think one of my favorite things to cook s a roast. But, for the superbowl, today I am throwing in come chicken and Stubbs BBQ sauce so we can have pulled BBQ chicken sandwiches!
